Ingredients
- 8 rice paper wrappers
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1 cup julienned bell peppers (red or yellow)
- 1 cup fresh spinach leaves
- 1/2 cup sliced avocado
- Fresh mint leaves
- Fresh cilantro leaves
Instructions
Step 1
Arrange all your vegetables, herbs, and avocado in separate bowls, making it easy to access each one when assembling the spring rolls.
Step 2
Fill a shallow bowl with warm water. Dip one rice paper wrapper into the water for 10 seconds until softened, then carefully lay it flat on a clean surface.
Step 3
Place spinach, carrots, cucumber, bell peppers, avocado and cilantro at the bottom third of the wrapper, then fold the bottom over the filling and tuck in the sides.
Step 4
Gently roll the wrapper tightly over the filling to form a compact roll. Repeat with remaining ingredients, and serve fresh with your favorite dipping sauce. Enjoy!
